Glycine Pancakes Recipe
This is my twist on Veronica’s gelatin pancake recipe (she called it an omlette, but imo it’s more of a pancake). If a gelatin pancake sounds kinda iffy, I get it, but just trust me, it tastes like a normal, fluffy pancake.
Glycine is so underrated for skin/joint/hair/everything health, and this pancake recipe is one of the best and most efficient ways to get a whopping two tablespoons of gelatin powder packed into one meal without being gross. For those of you thinking ok it may taste good flavor-wise, but what about the texture? As someone who often struggles with textures, it is not weird or jello-y at all, very similar to a normal, fluffy pancake! It’s very easy to make, and takes just a few minutes. Just try it!
Glycine Pancakes Recipe
Makes one, very filling, medium-sized pancake.
Approx 10-15 min total prep & cooking time.
Ingredients
2 Tbs Gelatin (I use this one)
2 Tbs Sugar
1 Tsp Vanilla Extract
1 Pinch Salt
Butter, coconut oil or ghee as needed for cooking
Creme fraiche / whipped cream for topping
Jam / fruit for topping
Instructions
Whisk eggs til homogeneous, then add your gelatin and continue mixing until incorporated. Then add sugar, salt, vanilla and continue mixing until incorporated. Allow this mixture to sit for 5-10 min while the gelatin blooms.
A minute or two before you’re ready to cook, preheat your pan to LOW heat. You want a low and slow for this. Cook time will depend on how browned you want it and the type of pan you’re using. I use a cast iron pan, and it took about 5 min to cook mine.
* Note that there will likely not be little bubbles indicating doneness like you’d see cooking a normal pancake. Your best bet is to lift the edge of the pancake slightly to see if it’s ready to flip.Serve immediately topped with whipped cream or creme fraiche and fruit or jam.
