Carrots are an excellent source of fiber and are high in nutrients like beta-carotene which is a precursor for vitamin A. Rob and I have been eating this salad pretty much daily for a couple months now as a part of our switch to the bioenergetic / Dr. Ray Peat inspired diet that we’ve been trying out.
About the Bioenergetic Diet
Dr Ray Peat was a biologist and researcher that studied the human body, hormones and metabolism and developed a way of living and eating that basically prioritizes metabolic and thyroid health. The diet prioritizes easy to digest proteins, organ meats, amino acids, and fruits while avoiding foods high in polyunsaturated fats (pro-inflammatory) and foods which are difficult to digest or contain endotoxins. I personally feel that this diet is the perfect marriage between nose-to-tail, carnivore and whole foods diet and have found it to be highly anti-inflammatory.
Digestion and metabolism are the root cause of a large percentage of chronic disease, and addressing this at the source with this, actually very sustainable way of eating has been a game changer. I feel more energetic, more alert and more peaceful after following this diet for just a few months. As someone who couldn’t do carnivore or keto long-term due to the low carbohydrates, adding in fruit and well-cooked starches has really helped.
Sourdough bread remains a grey area for people following Dr Peat’s work. In this article I share what Ray Peat does say about sourdough bread via his interviews, emails, and articles and explain why I chose to include it in my 7-day Ray-Peat Inspired bioenergetic meal plan.

Why Carrot Salads Can Benefit Hormone Health
1. Binding and Eliminating Excess Estrogen
Raw carrots contain unique fibers that can bind to excess estrogen in the intestines, preventing its reabsorption into the bloodstream. This process aids in reducing estrogen dominance, which is associated with symptoms like PMS, acne, and weight gain. By facilitating the elimination of excess estrogen, the raw carrot salad supports hormonal balance.
2. Reducing Endotoxins and Supporting Gut Health
The indigestible fibers in raw carrots also bind to endotoxins, which are harmful substances produced by certain gut bacteria. By binding these toxins, the carrot fibers help prevent their absorption, thereby reducing systemic inflammation and supporting liver health. This detoxifying effect contributes to improved digestion and overall well-being.
3. Enhancing Liver and Thyroid Function
The liver plays a crucial role in hormone metabolism, including the conversion of thyroid hormones. By reducing the burden of excess estrogen and endotoxins, the raw carrot salad supports optimal liver function, which in turn can enhance thyroid activity and metabolic health.
